What is a tagine?
The terracotta tagine of North Africa is, like the casserole of France or the balti of India, not a national recipe but a cooking pot. A tagine is an elegant and multi-functional dish. Formed of heavy fired and glazed clay it has a distinctive high conical lid sitting above a wide shallow dish. The cover is designed to condense steam rising from the cooking food and to return the fluids to the base of the pot, retaining moisture and intensifying flavour. The knob-like top of the lid makes it easy to lift off while cooking to add more ingredients, liquids and seasoning and with its attractive shape, it also makes a perfect serving dish.
You will find a tagine in almost every North African kitchen, they are effectively the original slow-cooker, suitable for long, gentle simmering in which the delicate flavours of herbs, spices and vegetables mingle, and fish or meat becomes meltingly tender.
Today, the tagine is increasingly recognized for the simple brilliance of its design and is appearing in more and more western kitchens.

Care Instructions
A tagine requires a certain amount of care. When new, soak for a minimum of 1 hour in water without detergent. Always remember that although fired pottery can take great heat and cold, it doesn’t respond well to sudden changes in temperature, so never plunge a hot tagine into water and never place a cold tagine in a hot oven as it may crack. Always allow it to heat up or cool down gently.
