Meze, sometimes spelt Mezze, is derived from the Arabic word t’maza, meaning ‘to savour in little bites’. It’s the ultimate sharing food. Each small dish provides a different taste and textural sensation, making the experience of eating healthy food a constant, joyous adventure.

Your guides on this culinary adventure will be self-taught chef and founder of Arabica, James Walters and Executive Chef, David Jones. 

The format:

The morning will start with warm pastries and Turkish coffee at Arabica Bar & Kitchen.

Followed by a whistle-stop tour of the market, where James and David will pick up some seasonal produce from a handful of their favourite stalls to be incorporated into the cooking session. 

Then its off to The Cookhouse which overlooks the buzzing Market, where you will produce an array of seasonal meze dishes featuring some of Arabica's larder essentials  like Wild Sumac, Tahini, Shade dried limes and Za'atar.

The day concludes with an informal meal, enjoying the food you’ve cooked, served with Lebanese wine.

Example dishes : 

Hummus with Lamb & toasted Pine nuts - An unctuous puree of chickpeas, stoneground tahini, garlic, lemon juice and extra virgin olive oil with Rhug estate lamb, toasted pine nuts and wild sumac. 

Summer babaganoush - Smokey chargrilled aubergine with tahini, summer herbs and pomegranate seeds

Courgette & feta cheese Borek -  Crisp, filo pastries filled with courgette, feta, nigella seeds, parsley

Summer vegetable Freeke - Smoked green wheat, charred artichoke, broad beans, mint, dill, toasted almonds

Fattoush salad - Seasonal leaves, full flavoured tomatoes, fragrant baby Lebenese cucumber, radish, spring onion, parsley, mint, Za'atar croutons finished with a  pomegranate dressing



Whats included and do I need to bring anything?

We will provide you with an apron and cooking equipment, recipe printouts and all ingredients for the class. Ladies - please wear a comfortable pair of low-heeled shoes. 

What is the cancellation policy?

Unfortunately, classes are non-refundable due to the agreement with the venue. In the unlikely event, we receive insufficient bookings for a class, the class may be canceled with 7 days’ notice and the option of a full refund or credit for a future class will be offered. 

What time should I arrive?

Please arrive at 9.30am sharp for welcome pastries and Turkish coffee.

You can book single spots or take a whole class privately for up to 8 guests. Please email us if you are interested in us arranging a special event.
